CHILEAN CHARQUICAN

The Charquicán is a classic Chilean meal that was allegedly first made using charqui by the Mapuche before Chile started raising cattle. Currently, beef is used in the preparation. There are several recipes for this meal, and many of them may differ in the veggies they use and in the consistency. I prefer mine to be drier, but if you want, you may make it more watery. As you'll observe, many households will have their own variation, all of which undoubtedly have to be excellent. A fried egg is typically placed on top of this meal; it complements the charquicán combination beautifully.



Ingredients 

  • 3 large potatoes 
  • 1 cup of zucchini cut into squares 
  • 1 clove of garlic finely chopped 
  • 1/2 onion finely chopped 
  • 1 cup of assorted vegetables (corns, green beans, peas, carrots) (can be frozen) 
  • 1/8 ground beef or small pieces of beef 
  • 3 oil tablespoons 
  • A little oregano and chili color 
  • Salt, pepper to taste 
  • 3 basil leaves 
  • 2 tablespoons of tomato sauce 
  • Eggs to accompany
  • Optional would be to use a little chicken broth 

Preparation

  1. In a saucepan of heated, salted water, the potatoes and squash are combined after being peeled and sliced into squares. 
  2. The veggies should also be cooked for around 5 minutes after the water starts to boil in a saucepan with heated water. 
  3.  onion and garlic for around 3 minutes in hot oil in a frying pan. Then, the meat is added and seasoned with a little oregano, red chili flakes, salt, and pepper to taste, in addition to the basil leaves that have been finely chopped.
  4. The tomato sauce is added last. 
  5. After thoroughly combining everything, simmer for another two minutes. 
  6. Remove some of the cooking water when the potatoes and squash are done cooking unless you want it thinner in which case leave the water you desire to obtain the desired consistency.
  7. Grind the squash and potatoes a bit. 
  8. Include the cooked veggies as well as the meat-fried onion. 
  9. Combine everything well and with care. Ideal serving would include a fried egg on top.
