The bandeja paisa is arguably the most well-known characteristic Colombian cuisine outside of the country, and although packing a serious caloric punch, it is an irresistible treat. This dish's components vary depending on the area of the nation where it is consumed, but they essentially consist of white rice, beef, and pig rinds.
It has also been accompanied by fried eggs, avocados, plantains, chorizo, and arepas. Even the most basic elements can be presented in several ways: Some restaurants offer it with grilled meat, but I personally like it with "powdered" meat. Ingredients
- 1 pound red kidney beans
- 2 green bananas
- 1 Mazola chicken broth packet
- 1 cup peeled and diced tomato
- ½ cup grated white onion
- 1 tablespoon butter
- 1 pound bacon
- 1 pound of beef
- 1 cup of rice
- 1 ripe banana
- Avocados
- Chorizos (1 per serving)
- Eggs (1 per serving)
Prepation
- Re-soak the beans from the previous evening.
- Melt the butter, onion, and tomato in a pressure cooker. In Colombia, this stir-fry is referred to as hogao.
- Then include the beans with the water they were soaked in, along with a package of chicken or beef broth.
- Add the bacon bits and plantain chunks to the beans and cook them gently.
- Cook everything while covered until everything softens.
- Take the remaining bacon, season it with salt, then cut it into strips for the pig rinds by making shallow cuts in the fattest region.
- The strips should be baked until golden brown before being finished in the rendered oven grease. They ought to be crisp.
- Then, chop it into bits and process them in a blender until the substance is powder, as the name implies.
- While the beans are finishing up their cooking, the other accoutrements should be made.
- Cook the white rice, make the arepas, cook the chorizos, eggs, and pieces of ripe plantain.
